It is our hope to preserve and share cultural knowledge across communities using food as the common thread.
These blue corn waffles utilizing Ute Mountain Ute corn from southwestern Colorado are sure to bring a different vibe to your next weekend brunch. Everyone loves the vibrant color and the roasted corn flavor. Top it off with fresh fruit, tribal maple syrup or even hot honey for a special treat
Meet Your Chef Instructor
Hello! I’m Chef Andrea (Ahn-dreh-ah) Condes, and I’m excited to answer your questions about Indigenous foods while sharing personal and cultural stories.
I’ve spent 23 years in the food and beverage industry — from prep cook to executive chef, and pastry cook to head pastry chef. For the past 11 years, I’ve focused on Indigenous cuisine across the Americas, inspired by my own desire to connect with my roots.
As a transracial adoptee from Venezuela, I use traditional foodways as a bridge to my ancestors, culture and community. Food is a powerful storyteller, and I’m here to help you build confidence in your kitchen and connect through Indigenous culinary traditions.

¡Hola! Soy la chef Andrea Condes y estoy encantada de responder a tus preguntas sobre alimentos indígenas al tiempo que compartimos relatos personales y culturales.
He trabajado 23 años en la industria de alimentos y bebidas, desde cocinera de preparación de ingredientes hasta chef ejecutiva, chef de pastelería y chef jefe de pastelería. En los últimos 11 años, me he enfocado en la cocina indígena de todas las américas, inspirada en el deseo de conectarme con mis raíces.
Como adoptada transracial de Venezuela, uso las cocinas tradicionales como un puente con mis ancestros, la cultura y comunidad. Los alimentos son unos narradores poderosos y estoy aquí para ayudarte a que tengas más confianza en la cocina y te conectes con las tradiciones culinarias indígenas.
